Creamy Pesto Veggie Dip

I recently read somewhere that in order for the body to properly absorb the nutrients in many vegetables, they actually need to be consumed with fat. So the take away message I got was that it is healthier to eat my veggies with dip than it is to eat plain veggies. Not that I really needed a reason, I tend to view vegetables as edible dip spoons, because people frown upon just eating dip with your fingers for some reason. Anyway, it seemed like a good reason to make my favorite veggie dip, after blue cheese dressing of course.

Creamy Pesto Dip

Ingredients
  1. 1/2 cup sour cream
  2. 1/2 cup mayonnaise or salad dressing
  3. 1/3 cup pesto (see below for my homemade pesto recipe)
  4. 2 tablespoons thinly sliced green onions
  5. 2 teaspoons lemon juice
Instructions
  1. Stir together all ingredients.
  2. Cover and refrigerate at least 2 hours but no longer than 48 hours. Serve with raw vegetables.

Fresh Basil Pesto

Ingredients
  1. 2 cups fresh basil leaves, packed
  2. 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
  3. 1/2 cup extra virgin olive oil
  4. 1/3 cup pine nuts or walnuts
  5. 3 medium sized garlic cloves, minced
  6. Salt and freshly ground black pepper to taste
Instructions
  1. Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
  2. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Notes
  1. Yields 1 Cup. Scale by 1/3 to make just enough for the Creamy Pesto Dip or make a whole batch and eat the rest over pasta.
